I started with 1 pkg.chicken tenderloins(about 1.2lbs)
1 can chicken broth
4 cans of water
2 cans of tomato sauce
1 can of black beans(drained and rinsed)
1 can of corn(drained and rinsed)
1 cup of cooked rice
2 cups diced tomatoes and onions(this was combined; I had made pico de gallo earlier in the week and just dumped it in the soup)
1/2 green bell pepper diced
1/2 red bell pepper diced
3 cloves of garlic pressed
Italian dressing 2 squeezes
salt to taste
garlic salt to taste(I added this to the chicken when it was cooking)
lime juice
fresh cilantro
2 tablespoons sour cream(for topping;optional)
handful of tortilla chips
shredded cheese(for topping;optional)
First cook the chicken in the broth and water until very tender.
After chicken is not longer pink in the middle you can start adding the rest of the ingredients in no particular order. I added the cilantro and pressed garlic last this time. I cooked this on Med-hi to med heat. once all ingredients were added I turned it down to med-lo, low. I simmered it for about 35 mins. Served it with 1 tablespoon of sour cream and a handful of cheese and chips. So easy and yummy!

New Years Resolutions
So I have several New Year Resolutions. One to update the blog weekly, to try a new recipe once a month and maybe write a blurb in the blog about it. Or make a new blog called Kelly's Favorites, and to try once a month cooking. May not be able to do a whole month's worth because of freezer space but as much as space allows. To try a new craft twice a month. To decorate the fireplace now that it is done, and to make the curtains for the dining room, make another set for the living room, declutter every room, and redo the MB bathroom walls.
Possibly put in a new fence and add shutters to the house. So as you can see I have a busy year planned. So here's to a bright NEW YEAR!
